When we planned our trip to Kanazawa, we were on the hunt for an authentic Japanese dining experience. After scouring a popular Japanese gourmet site, we decided on Wanaka for our first night’s dinner. Located in a cozy alley just a ten-minute stroll from our hotel (Mitsui Garden Hotel Kanazawa) near JR Kanazawa Station, Wanaka turned out to be a quaint local Izakaya that promised a genuine and interactive culinary adventure. Stepping inside, the place welcomed us with its warm, buzzing atmosphere typical of a traditional Izakaya. We grabbed seats at the counter, which turned out to be the best spot in the house. From here, we had a front-row view of the Wanaka’s chef’s culinary ballet. It was fascinating watching them work; with each precise, passionate movement, they turned simple ingredients into artful dishes right before our eyes. The chef wasn’t just cooking; they were performing, and every dish was a scene in this delicious drama.
Sitting at the counter also gave us a chance to chat with the chef. He was friendly, and it wasn’t long before he was recommending pairings of sake and dishes, helping us navigate the menu with an insider’s expertise. As we were planning to purchase several bottles of regional sake, he suggested that we visit Fujita Liquor Store. That was a great tip as we had wonderful bottles from Fujita with the knowledgeable store clerk’s help.
We let the chef guide our choices, which led us to try some seasonal specialties that were simply sublime. The recommendations were spot-on, featuring the best local and seasonal ingredients. One of the highlights was the grilled dishes—the chef really knew how to make flavors pop! The fried white shrimp, for instance, was a revelation. Crispy, tender, and bursting with flavor, it was an ideal companion to Kanazawa’s regional sake. The combination elevated our taste experience, making each sip and bite a moment to savor.
For seafood aficionados like us, the sashimi assortment was a dream come true. Wanaka prides itself on its use of freshly caught local fish, and it showed in every slice. The freshness of the seafood, paired with the chef’s skillful preparation, allowed us to taste the ocean’s bounty in its purest form. Each piece of sashimi was not just food; it was a tribute to Kanazawa’s maritime heritage.
Navigating the menu in Wanaka could have been a challenge since it was all in Japanese, but the chef’s hospitality made all the difference. They encouraged us to embrace the unknown and go for the “Omakase” option—a chef’s choice menu that promised a personalized culinary journey. It was like putting ourselves in the hands of a culinary navigator, and we were not disappointed. Each course was a surprise, an exploration of tastes and textures that was both thrilling and delightful.
We picked a great place for our first night out in Kanagawa. We learned the regional special dishes and what to order during the rest of the stay. The chef’s sake shop recommendation was also helpful.
